Ingredients for 1 servings:

  • 180 g flour
  • ½ pack of baking powder
  • 4 g cinnamon
  • 4 g spice mix (four spice)
  • 1 pinch of salt
  • 3 eggs
  • 180 g sugar
  • 140 g sunflower oil
  • 220 g carrot(s), grated
  • 45 g raisins, dried
  • 55 g walnuts, chopped
  • 60 g applesauce

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 55 minutes; Total time approx. 2 hours 15 minutes

Carrot cake with applesauce, raisins and nuts

Sift together the flour, spices, salt, and baking powder and mix. In another bowl, beat the eggs until frothy and then mix with the sugar until creamy. Add the oil gradually, stirring continuously. Add the applesauce. Mix with the flour mixture. Add the grated carrots, raisins, and nuts and mix to combine. Pour the batter into a greased, coated, oblong or round baking dish and bake in a preheated oven at 180 degrees Celsius for about 55 minutes. Check occasionally and remove from the oven when browned. Let cool and serve with a topping, such as lemon mascarpone cream, or without.
