Saxon potato cake

Ingredients for 1 servings:

  • 500 g jacket potatoes from the previous day, mashed
  • 250 g flour
  • 1 packet of baking powder
  • 250 g butter
  • 3 eggs
  • 2 tbsp sugar
  • 1 cup(s) raisins, soaked
  • Grease for the tray
  • cinnamon sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Knead the mashed potatoes, flour, baking powder, 150g butter, eggs, sugar, and a cup of soaked raisins into a smooth dough. Roll out the dough thinly on a greased baking sheet and brush with 50g melted butter. Bake in a preheated oven at 225°C (top/bottom heat) for about 25 minutes. Remove from the oven and brush with 50g melted butter while still warm. Sprinkle with cinnamon sugar. The cake tastes best served warm. Note: The serving size is based on 6 potato cake slices from the baking sheet.
