Quark-oil dough
For the pudding, put the cornstarch, sugar, a pinch of salt, and three egg yolks in a bowl. Add 125g of the milk and mix. Scrape out the vanilla pod. Add the vanilla seeds and pod to the remaining milk and bring to a boil. Add the egg yolk mixture to the boiling milk and bring to a boil for three to four minutes. Then refrigerate. Stir occasionally to prevent a skin from forming. For the pastry, knead together the quark, oil, sugar, vanilla sugar, a pinch of salt, flour, baking powder, and one egg. For the crumble, knead together the flour, butter, sugar, vanilla sugar, and marzipan. Grease a springform pan. Roll out the pastry and place it in the springform pan. Rolling it out works best if you place it between sheets of baking paper. Peel the apples and cut them into wedges, then arrange them on top of the pastry. Spread the pudding over the apples and then sprinkle the crumble on top. Bake in the oven at 180 degrees top/bottom heat for 50 to 60 minutes on the second rack from the bottom.
