Chocolate Coconut Cookies

Ingredients for 1 servings:

  • 200 g flour
  • 75 g cornstarch
  • 1 tsp baking powder
  • 200 g butter, soft
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 1 pinch of cinnamon
  • 1 m.-sized egg(s)
  • 100 g desiccated coconut
  • 100 g chocolate decoration (chocolate drops)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine the flour, cornstarch, and baking powder, sift, and set aside. Cream the butter with the sugar, vanilla sugar, a pinch of salt, and a pinch of cinnamon until fluffy. Gradually add the beaten egg and beat well with the butter mixture. Stir in the flour mixture. Finally, fold in the coconut flakes and chocolate chips. Using a teaspoon, scoop out small balls of dough and place them slightly apart on a baking sheet lined with baking paper. Bake in a preheated oven at 175°C for 10-15 minutes. When the cookies are done, transfer them to a wire rack and let them cool completely.
