Rumpel's Chocolate Pear Cake

Ingredients for 1 servings:

  • 400 g pear(s), firm
  • 250 g flour
  • 3 tbsp, heaped cocoa powder
  • ½ tsp cinnamon powder
  • 1 packet of baking powder
  • 250 g sugar
  • 3 eggs
  • 50 ml milk
  • 125 ml rapeseed oil
  • 150 g almonds, chopped
  • 50 g almond flakes
  • 200 g chocolate coating

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 45 minutes

Peel, quarter, core, and roughly dice the pears. Mix together the flour, cocoa powder, cinnamon powder, and baking powder. Beat the eggs and sugar with a mixer for about 3 minutes until creamy. Stir in the flour mixture alternately with the milk and oil. Fold the chopped almonds and diced pears into the mixture. Pour the batter into a greased loaf pan. Bake in a preheated oven at 180°C or 160°C fan-assisted oven on the second-lowest rack for 50-60 minutes. Let cool in the pan for 15 minutes. Melt the glaze in a water bath. Turn the cake out of the pan and glaze it on a wire rack. Sprinkle with flaked almonds. Let the cake cool completely. Serve with whipped cream.
