Ingredients for 1 servings:
- 125 g dark chocolate (min. 70% cocoa)
- 150 g flour
- 30 g cocoa powder, sifted
- 1 tsp baking soda
- ½ tsp salt
- 125 g butter, melted
- 75 g brown sugar
- 50 g cane sugar
- 1 g vanilla sugar
- 1 egg(s), chilled
- 200 g dark chocolate, chopped
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
Makes about 30 pieces.
Preheat the oven to 170°C. Melt the dark chocolate in a double boiler. Mix the flour, cocoa powder, baking soda, and salt in a bowl. Beat the butter and sugar until dissolved. Add the melted chocolate to the butter mixture and mix. Beat the egg and vanilla sugar until fluffy and add to the butter and chocolate mixture. Stir everything into the dry ingredients and fold in the chopped chocolate. Using teaspoons, place about 30 small mounds on the baking sheet lined with baking paper, or use an ice cream scoop to place about 15 large mounds on the baking sheet. Do not flatten the mounds and leave enough space between them. Bake for about 15 minutes for small cookies and about 18 minutes for large cookies. Let the cookies cool on the baking sheet and then cool on a wire rack until firm.
