Ingredients for 1 servings:
- 125 g butter
- 250 g flour
- 65 g powdered sugar
- 3 egg yolks
- ½ organic lemon(s), zest
- 1 egg white
- 50 g granulated sugar

Prepare a shortcrust pastry with all ingredients except the granulated sugar and egg whites and chill. Roll the dough into approximately 1 cm thick strands. Divide into 8 cm long pieces and form an “S” shape. Briefly beat the egg whites with a fork. Fold the top of the “S” into the granulated sugar and then dip into the granulated sugar. Place on a prepared baking sheet. Bake slowly at about 160°C (top/bottom heat) for about 10 minutes until golden brown. Store in a tin.
