Chicken jus with thyme

Ingredients for 6 servings:

  • 3 tbsp peanut oil
  • 1 kg chicken wings, roughly chopped
  • 100 g carrot(s), chopped
  • 100 g onion(s), chopped
  • 200 ml dry white wine
  • 1 liter of water
  • 6 juniper berries, crushed
  • 1 clove(s) garlic, crushed
  • 25 g thyme, fresh
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour

Heat the oil in a pan and sear the chicken wings until lightly browned. Drain the oil and rendered fat, then add the carrots and onions and sauté for about 3 minutes. Add the white wine and reduce by half. Then add all the remaining ingredients and simmer gently for 45 minutes, carefully skimming off any foam. Strain through a sieve and reduce further to taste. This sauce goes well with roasted poultry, but also with fresh pasta.
