Working time approx. 25 minutes; Total time approx. 25 minutes

Fresh cheese from Ethiopian cuisine

Slowly bring the buttermilk to a boil over low heat. Let it simmer for about 20 minutes, until the milk forms into a cheese. Drain in a sieve and let it cool. Iab is served with spicy dishes.
