Ingredients for 1 servings:

  • 100 g butter
  • 100 g sugar
  • 2 tbsp cocoa powder
  • 150 g flour
  • 1 tsp baking powder
  • 2 eggs
  • 100 g sugar
  • 100 g butter, melted
  • 200 g low-fat curd cheese
  • ½ pack of pudding powder, vanilla

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 175°C (150°C fan-assisted). Line a 12-cup muffin tin with paper baking cups. Knead the first 5 ingredients into a shortcrust pastry. Divide 2/3 of the dough evenly among the cups and press firmly into the bottom. Beat the eggs until frothy. Add the sugar and butter, then stir in the low-fat quark and vanilla pudding powder. Divide the quark mixture evenly among the cups. Tear the remaining dough into pieces and spread over the quark mixture. Bake on the middle rack of the oven for about 25 minutes. Tip: For a light fruity flavor, simply add 2 mandarins to the quark mixture. Tastes truly delicious.
