Baked fillet platter with broccoli

Ingredients for 4 servings:

  • 100 g cheese (hard cheese), e.g. Gruyère
  • 500 g broccoli
  • 500 g beef fillet(s)
  • 250 g pork fillet(s)
  • 250 g turkey meat (turkey fillet)
  • 3 tbsp clarified butter
  • 1 packet of hollandaise sauce for 125 g butter
  • 100 g whipped cream
  • 70 g butter
  • 1 dashes Worcestershire sauce
  • salt and pepper
  • Water

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Grate the cheese. Trim and wash the broccoli, divide it into florets, and simmer covered in a little boiling salted water for about 6 minutes. Then drain. Wash the meat, pat dry, and cut into 4 medallions. Fry in hot clarified butter in 1-2 pans for about 3 minutes per side. Stir the sauce powder into 1/8 liter of water and bring to a boil, add the cream, and bring to a boil again. Remove from the heat and whisk in only 70g of butter in pieces. Season with Worcestershire sauce, salt, and pepper. Season the medallions with salt and pepper and place on a large, ovenproof platter or in a gratin dish. Toss the broccoli in the hot cooking fat and add it. Spread the hollandaise sauce over the meat and broccoli and sprinkle with the cheese. Grill or gratinate in the oven at high heat for about 5 minutes. This goes well with croquettes or duchess potatoes and a cool white wine.
