Peanut Butter Cookies

Ingredients for 1 servings:

  • 250 g flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 125 g margarine, room temperature
  • 125 g peanut butter, room temperature
  • 100 g sugar, white
  • 100 g brown sugar
  • 2 small eggs
  • 50 g peanuts, coarsely chopped

Instructions

Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Sift flour, baking powder, and baking soda into a bowl and mix in the salt. Set aside. In a second bowl, beat the peanut butter, shortening, and all of the sugar with an electric mixer on medium speed until light and fluffy. Add the eggs, one at a time, beating well each time. Add the flour mixture and mix well, stirring in any chopped peanuts. Using your hands or a teaspoon, form the dough into 2-3 cm balls and place them 4-5 cm apart on a baking sheet lined with parchment paper. Flatten each ball twice with a fork to create a checkered pattern and to a thickness of about 0.5 cm (1/2 inch). Bake in the center of the oven for 10-12 minutes until golden brown, then let cool on a wire rack.
