Vegan chocolate banana muffins

Ingredients for 1 servings:

  • 200 g flour
  • 50 g cocoa powder
  • 150 g sugar
  • ½ pack of baking powder
  • 7 tbsp oil (cooking oil)
  • 300 ml water
  • 1 packet of vanilla sugar
  • 2 bananas, ripe
  • 150 ml coconut milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

with coconut milk, makes 12 muffins

Sift flour and mix with cocoa. Add sugar and vanilla sugar. Make a well. Puree bananas and mix with coconut milk. Pour into the well and add oil. Stir gently to avoid lumps. Gradually add water. You may need less! Finally, mix in sifted baking powder. Don’t overmix, or the muffins will be hard. Pour about 2 tablespoons of batter per muffin into the tin and bake at 180°C (top and bottom heat) for about 30 minutes. Tip: The riper the bananas, the better! Makes 12 muffins.
