Ingredients for 1 servings:

  • 160 g margarine
  • 140 g cane sugar
  • 1 pinch of salt
  • 2 packets of vanilla sugar
  • 260 g flour (spelt flour)
  • 3 tsp baking powder
  • 1 tsp lemon(s), zest
  • 200 ml soy milk (soy drink)
  • 4 apples
  • possibly apricot jam

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Whisk the margarine, sugar, salt, and vanilla sugar until fluffy, then alternately stir in the flour mixed with the baking powder and the soy milk. Add the lemon zest. Pour the batter into a greased springform pan (28 cm diameter). Peel, halve, and core the apples, cut them lengthwise several times, and press them into the batter. You can also slice the apples and place them on top of the cake. Bake at 170°C for about 50-55 minutes (test with a skewer). Tip: Spread the cake with apricot jam while it’s still warm; it tastes especially good.
