Ingredients for 1 servings:

  • 200 g flour (wheat flour 405)
  • 100 g sugar
  • 150 g butter, soft or margarine
  • 1 tbsp vanilla sugar
  • 1 pinch of salt
  • 1 pinch of baking powder
  • 200 g fig(s), dried

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut off the hard twig at the end of the fig neck and cut the figs in half several times. Using a food processor, finely chop the figs. Sift the flour and baking powder into a bowl. Add half of the fig mixture and the remaining ingredients. Using an electric hand mixer (fitted with a dough hook), mix until you have a dough, first on low speed, then after one minute on high. Shape the dough into balls, roughly hazelnut-sized portions. Press some of the fig mixture into the center of the dough balls (like the pupil of an eye) and place on a baking tray lined with baking paper. Place on the middle rack of a preheated oven. Top/bottom heat: 180°C Fan: 160°C Gas mark 2-3 Baking time: 10 mins Then pull the cookies, using the baking paper, onto a wire rack and allow to cool.
