Ingredients for 1 servings:

  • 200 g flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • 150 ml soy milk (soy drink)
  • 100 g cranberries, dried
  • 100 g chocolate, lactose-free, dark, chopped
  • 100 g hazelnuts, chopped
  • 80 g sugar
  • 100 g applesauce, unsweetened
  • 70 ml oil, neutral
  • ½ tsp salt
  • 50 g oat flakes

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine soy milk, applesauce, oil, and oats and let them soak for 5-10 minutes. In another bowl, combine flour, baking powder, baking soda, cinnamon, sugar, and salt. Stir in the soaked oat mix, cranberries, nuts, and chocolate. Add more soy milk if the batter is too stiff. Pour into muffin cups and bake at 200°C for 20-25 minutes.
