Oat cookies with cranberries and raisins

Ingredients for 1 servings:

  • 210 g wheat flour
  • 210 g oat flakes, fine
  • 145 g butter or margarine, soft
  • 55 g brown sugar
  • 90 g sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tbsp maple syrup, or beetroot syrup if necessary
  • 110 g raisins, chopped
  • 75 g cranberries, dried, chopped
  • 50 ml water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix flour, baking powder, butter, sugar, oats, and salt until crumbly. Add the syrup, cranberries, raisins, and water and knead everything into a firm dough. Carefully roll the dough into one long sausage or several small sausages, approximately 5-7 cm in diameter. Place the dough in the refrigerator for about 30 minutes, preferably wrapped in plastic wrap. Preheat the oven to 200 degrees Celsius. Once cooled, cut the dough rolls into approximately 1 cm thick slices and place them on a baking sheet lined with parchment paper. Reduce the oven temperature to 175 degrees Celsius and bake the cookies on the middle rack for 10-15 minutes, then let them cool on a wire rack. This recipe yields approximately 20 cookies.
