Turkey fillet topped with ham, pineapple and cheese

Ingredients for 4 servings:

  • 4 slice(s) turkey meat (fillet)
  • 4 slices of cooked ham
  • 8 slice(s) pineapple, fresh or from a can, drained
  • 4 slices of cheese (Gouda, medium-aged)
  • 150 ml pineapple juice
  • 4 tbsp cognac
  • 3 tbsp honey
  • ½ tsp cayenne pepper
  • Salt
  • Paprika powder, sweet

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

with a decoction of pineapple juice, honey, cognac and cayenne pepper

Season the meat with a little salt and paprika, and sear briefly in a pan. Place it in a shallow baking dish and top with the ham. Sear the pineapple (patted dry) in the same way, deglaze with pineapple juice, honey, and cognac, add cayenne pepper, and place the slices on the fillets. Then top with cheese and pour over the cooking juices. Bake in the oven at 200°C for approximately 15-20 minutes. Serve with croquettes and fresh vegetables, or serve without side dishes for those following a food combining diet.
