Ingredients for 1 servings:

  • 1 large flour tortilla(s), approx. 30 cm
  • 60 g chicken or turkey, cooked
  • 50 g pineapple pieces, cut into small pieces
  • 15 g barbecue sauce
  • 25 g sour cream
  • possibly Tabasco
  • possibly spice mix (Mexican spice)
  • 50 g pizza cheese

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 20 minutes

Using leftover chicken or turkey meat

Cut the cooked meat into bite-sized pieces. Mix with the barbecue sauce, pineapple, and sour cream, and season with the spices. Stir in half of the cheese. Cover and let marinate in the refrigerator for 1 hour. Then remove the meat from the refrigerator. Preheat the oven to 160°C (320°F). Heat the tortilla in the oven for 1 minute to make it easier to roll. Spread the sauce over the tortilla, leaving the edges free. Fold in slightly on the right and left sides, then roll up as tightly as possible and place seam-down on a baking sheet lined with parchment paper. Sprinkle with the remaining cheese. Bake in the preheated oven on the middle rack for about 15 minutes. Serve with salad.
