Oat-coconut cookies with marzipan

Ingredients for 1 servings:

  • 250 g oat flakes, wholegrain
  • 100 g desiccated coconut
  • 100 g marzipan paste
  • 250 g flour
  • ½ pack of baking powder
  • 150 g sugar
  • 2 eggs
  • 125 g butter
  • 125 ml water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 16 minutes; Total time approx. 31 minutes

Melt the butter and cut the marzipan into small cubes. Place the desiccated coconut and oats in a large bowl and mix well with the melted butter. Now add the marzipan cubes and eggs. Mix the baking powder, flour, and sugar and add to the dough alternately with the water. Please be careful with the water; the 125 ml is my estimate. It’s better to use a little less at first and then gradually add more until a sticky, tough dough forms. Using a tablespoon, drop small heaps onto a baking sheet lined with baking paper and bake in a preheated oven at 180°C for about 16 minutes.
