Ingredients for 1 servings:

  • 500 g flour
  • 1 packet of baking powder
  • 125 g sugar
  • 1 lemon(s), grated peel
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 1 egg(s) (1 unit egg substitute)
  • 250 g margarine
  • Flour, for rolling out
  • e.g. powdered sugar, chocolate icing etc., for decoration

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Mix the flour with the baking powder. Using a hand mixer, mix the sugar, vanilla sugar, salt, and lemon zest evenly into the soft margarine. Add the egg substitute and flour and knead into a dough. Chill the dough for 30 minutes. Roll out the dough on a floured surface to a thickness of about 0.5 cm and cut out or shape cookies. Line a baking sheet with baking paper or grease it. Arrange the cookies on top. Bake in a preheated oven at 200°C on the middle rack for 8-12 minutes until golden brown. After baking, decorate as desired: glaze (e.g., powdered sugar with lemon juice), sugar pearls, food coloring, chocolate glaze, jam, or similar. Tip: Egg substitute is available at health food stores. Alternatively, you can mix 1 tablespoon of soy flour with 2 tablespoons of water until smooth and use.
