Ingredients for 65 servings:

  • 3 eggs (class 3)
  • 375 g sugar
  • 1 packet of vanilla sugar
  • 1 small apple
  • 500 g hazelnuts, grated
  • wafers
  • Hazelnuts, whole, for decoration

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the eggs, sugar, and vanilla sugar until frothy. Wash, peel, quarter, core, and grate the apple. Then stir it into the egg and sugar mixture. Stir in the hazelnuts. With wet hands, form small balls from the mixture and place them on the wafers. Decorate each with a hazelnut. Bake in a preheated oven (175°-200°C / Gas Mark 2-3) for 20-25 minutes. Tip: I always place the dough mixture on the wafers with a teaspoon (it doesn’t stick as much…).
