Tomato sauce with feta

Ingredients for 4 servings:

  • 600 g tomatoes
  • 100 g feta cheese
  • 1 small onion(s)
  • 1 tbsp oil
  • 1 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • 1 pinch of salt
  • herbs of your choice

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Finely dice the onions and sauté in 1 tablespoon of oil until translucent (a non-stick pan is best). Meanwhile, roughly dice the tomatoes (or more if you like), add them to the onions, and immediately add a pinch of salt. Cook the whole thing with the lid on for about 5-10 minutes over medium heat (stirring occasionally). Then add 1 tablespoon of brown sugar and 1 tablespoon of balsamic vinegar. Let it simmer for another 5-10 minutes. In the meantime, finely dice the feta cheese, add it to the sauce, and let it melt. If you like, you can of course add herbs as desired. Goes well with all kinds of pasta.
