Almond corners with apricot jam

Ingredients for 1 servings:

  • 250 g flour
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 egg(s)
  • 125 g butter
  • 200 g almonds (flaked almonds)
  • 100 g almonds, chopped
  • 3 tbsp water
  • 100 g powdered sugar
  • 125 g butter
  • 250 g apricot jam
  • 150 g couverture (either dark, milk or white chocolate)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Especially delicious with the apricot jam

Knead the flour with the vanilla sugar, 100g sugar, 125g butter, and the egg. Let it rest in a cool place for at least 1 hour. Bring 125g butter, 100g powdered sugar, 1 sachet of vanilla sugar, and the water to a boil and stir in the almonds. Roll out the dough on a baking sheet and spread with the jam, then pour the almond mixture over it. Bake in a preheated oven at 200°C for about 15 minutes. Cut into triangles while still warm, let cool, and then partially cover with the chocolate coating.
