Chocolate-peanut butter cookies

Ingredients for 1 servings:

  • 400 g flour
  • 110 g cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 130 g sugar
  • 130 g brown sugar
  • 130 g butter
  • 60 g peanut butter
  • 2 tbsp vanilla sugar
  • 2 eggs
  • 200 g peanut butter
  • 180 g powdered sugar
  • 100 g sugar, for draping

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

with peanut butter filling, makes about 25 cookies

Dough preparation: Cream butter, sugar, peanut butter, and eggs until fluffy. Add flour, baking powder, vanilla sugar, salt, and cocoa powder and mix until smooth. Chill the dough for about 30 minutes. Filling preparation: Mix peanut butter with powdered sugar. Form the mixture into small balls. Take a 1-tbsp piece of dough from each ball and flatten with your hands. Place a ball of filling in the center and place a second, flattened piece of dough on top. Press in the edges and roll the cookie in sugar. Place on a baking sheet lined with parchment paper and flatten the cookies with a glass. Bake the cookies in a preheated oven at 200°C for 7-9 minutes.
