Butter cheese pressed dumplings

Ingredients for 4 servings:

  • 1 small onion(s)
  • 1 garlic clove(s)
  • 2 tbsp butter
  • 50 g bacon, chopped
  • 200 ml milk, warm
  • 250 g bread roll(s), stale, diced, dumpling bread or pretzel cubes
  • 2 m.-sized eggs
  • Salt and pepper, nutmeg
  • 100 g cheese (butter cheese or other mild cheese) coarsely grated
  • 1 tbsp parsley, freshly chopped
  • 2 tbsp oil (sunflower oil) for frying the dumplings

Instructions

Working time approx. 20 minutes; Rest time approx. 10 hours; Total time approx. 10 hours 20 minutes

Soup garnish

Peel and finely chop the onion and garlic. Heat the butter in a pan, fry the onions until translucent, then add the milk and heat through. In a bowl, combine the bread cubes and the remaining ingredients (except the oil). Pour the warm onion milk over the bread and mix everything together loosely. Let it rest briefly. Shape into small dumplings, flatten, and fry slowly on both sides in oil. Add to clear meat broth as a soup garnish. Warm dumplings are also delicious with salad. A stronger cheese is fine.
