Ingredients for 3 servings:
- 200 g toast bread (spelt toast bread)
- 220 ml milk
- 1 egg(s)
- 150 g cheese, grated
- 1 large carrot(s)
- ½ bunch parsley, flat
- salt and pepper
- nutmeg

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Roughly crush the toast slices with your hands and mix with the egg, milk, grated carrot, grated cheese, chopped parsley, and seasoning. Let rest for 15 minutes. Preheat the oven to 180°C (top/bottom heat). Knead the dough vigorously with your hands and form into 6 meatballs. Place on a baking sheet lined with parchment paper and bake for 15 minutes. This goes very well with an apple and endive salad.
