Spinach soup

Ingredients for 4 servings:

  • 250 g spinach, fresh
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 tbsp butter
  • nutmeg
  • ¾ liter meat broth
  • ¼ liter of milk
  • 1 egg yolk
  • 1 cup crème fraîche

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Squeeze the washed and well-drained spinach and cut into fine strips. Sauté the chopped onion and garlic clove in the butter until light yellow. Add the spinach and season with salt and nutmeg. Sauté for about three minutes, then pour in the meat broth and bring to a boil. Combine the milk with the egg yolk and crème fraîche and stir into the soup. Do not let it boil. The soup can also be made with frozen spinach leaves; in this case, simply sauté the leaf strips briefly.
