Leek Cream Soup

Ingredients for 6 servings:

  • 1 kg leek
  • 2 large onions
  • 500 g minced meat, mixed
  • 30 g butter or margarine
  • 1 ½ liters vegetable broth
  • 200 g processed cheese, cream
  • ½ cup sour cream
  • Salt
  • 1 pinch(s) of sugar
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Trim and wash the leek and slice it into rings. Dice the onion. Brown the onion and minced meat in hot fat. Add the leek and sauté for about 5 minutes. Pour in the broth and simmer for 20 minutes. Then stir in the cheese and sour cream. Bring back to a boil and season with salt, pepper, and sugar.
