Ingredients for 1 servings:

  • 375 g wheat flour type 405
  • 250 g butter
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 125 g hazelnuts, ground
  • 75 g hazelnuts, whole kernels
  • 1 egg(s), separated
  • 100 g powdered sugar up to 120 g

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Swabian Christmas pastries

Preheat the oven to 180°C. Sift the flour onto the work surface. Make a well in the center. Add the egg yolks, sugar, ground nuts, and vanilla sugar. Sprinkle the butter flakes over the dough. Knead everything well with your hands. Let the dough rest for 1 hour. Beat the egg whites with the powdered sugar. Roll out the dough and cut out round cookies using a drinking glass. Place a small blob of beaten egg whites in the center and use it to stick a hazelnut to the center. Bake at 180°C for about 10 minutes. The straw hats are ready when the egg whites start to brown slightly.
