Spicy apple soup

Ingredients for 4 servings:

  • 4 apples
  • 2 red bell peppers
  • 1 small cucumber(s)
  • 1 clove(s) garlic
  • 1 tbsp butter
  • 750 ml meat broth, hot
  • Salt and pepper, freshly ground
  • 1 tsp sugar
  • ½ tsp paprika powder, hot
  • 100 g cream

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash and dry the apples. Quarter, core, and finely dice them. Wash, dry, quarter, core, and dice the peppers and cucumbers. Peel the garlic clove. Add the butter and garlic press, add the diced apples, bell peppers, and cucumber, and sauté for about 5 to 10 minutes until soft. Pour the hot meat broth over the vegetables. Let everything simmer for about 5 minutes, then puree with the immersion blender of a hand mixer. Season the soup with salt, pepper, sugar, and paprika. Pour in the cream and bring everything back to a boil.
