Ingredients for 4 servings:
- 200 g wild garlic, roughly chopped
- 2 m.-sized potatoes
- 500 ml meat broth (or vegetable broth)
- 1 medium-sized onion(s), finely chopped
- 1 tbsp butter
- 2 tbsp crème fraîche (or sour cream)
- salt and pepper
- nutmeg
Instructions

Melt the butter in a deep saucepan and sauté the chopped onion until translucent. Peel the potatoes and grate them directly into the pan. This thickens the soup. This saves you the trouble of thickening with flour, which would somewhat diminish the delicious flavor of the wild garlic. Sauté them briefly and then add the stock. Add a good amount of salt, as the potatoes absorb a lot of salt. Simmer for a few minutes, then add the chopped wild garlic and stir. Once the wild garlic has collapsed and softened, vigorously puree the soup with a hand blender until the desired consistency is reached. Season to taste with salt, pepper, and nutmeg, and stir in the crème fraîche.
