Celery-Apple Soup

Ingredients for 4 servings:

  • 400 g celery
  • 2 apples, sour
  • 2 onions
  • 30 g butter
  • 200 ml apple cider
  • 400 ml vegetable stock
  • 200 ml cream
  • Salt
  • pepper
  • Sugar

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

For the soup garnish, core half an apple, but leave it unpeeled, and finely dice it. Finely dice 100g of peeled celery. Set the apple and celery cubes aside with 15g of butter. Peel and dice the onions and celery. Peel, core, and dice the apple. Sauté the onions in butter until golden brown. Add the celery and apple cubes and sauté briefly, add the cider and vegetable stock, and simmer for about 30 minutes. Finely purée the soup with the cream and season with salt, pepper, and sugar. Sauté the celery cubes for the soup garnish in butter. Add the apple cubes, toss everything together again, and then serve with the prepared soup.
