Ingredients for 2 servings:

  • 500 g spelt flour
  • 250 g rye flour, type 1150
  • 250 g wheat flour, type 550
  • 3 packets of dry yeast
  • 35 g salt
  • 1 tsp sugar
  • 700 ml kefir
  • 150 ml water
  • 80 g flaxseed
  • 80 g sesame seeds
  • 40 g sunflower seeds

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 35 minutes

Heat the kefir and water in the microwave for one minute at 800 watts. Combine the flour, grains, yeast, salt, and sugar with a spoon, then add the kefir and water and knead everything in a food processor for 10 minutes. Let it rise until it has doubled in size. Then form two balls and place them in two proving baskets. Let it rise for another 45 minutes, then turn out onto a baking sheet. Bake at 200°C (top/bottom heat) for 45 minutes. To begin, add half a cup of water to the bottom of the oven and create steam.
