Ingredients for 1 servings:
- 175 g flour
- 175 g margarine
- 175 g sugar
- 150 ml soy milk (soy drink), alternatively oat or almond milk
- 3 tbsp water
- 40 g nuts, ground, preferably hazelnuts
- 1 bag of baking powder
- 1 pinch of salt
- 1 pack of pudding powder (vanilla pudding powder)
- 1 pack of soy cream (Soy Cream Cuisine), already whipped and chilled
- 250 ml soy milk (soy drink), alternatively oat or almond milk
- 1 pack of pudding powder (vanilla pudding powder)
- 150 g marzipan, cut into pieces
- 3 tbsp sugar
- 4 apples, peeled and cut into strips
- 1 lemon(s), the juice
- 3 tbsp sugar
- 1 sachet of agar-agar
- 1 pack of marzipan – blanket, rolled out
Instructions
Working time approx. 50 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes
Mix together the ingredients for the batter. It’s best to halve the batter and bake each in a medium-sized springform pan for 30 minutes at 180 degrees. Then let it cool. Meanwhile, for the pudding, mix the powder with a little soy milk and the sugar until smooth, bring the remaining soy milk to a boil, stir in the mixed powder and the marzipan, and bring to a boil. If the marzipan doesn’t dissolve completely, don’t panic. The pudding needs to cool now, and before adding it to the already whipped cream, blend it briefly again with a hand blender to prevent lumps from forming when the cream and pudding are mixed. Put the cream back in the fridge. Once the sponge cakes have cooled, put the chopped apples in a saucepan with the lemon juice and sugar and bring to a boil. Just before boiling, add the agar-agar so that when it’s spread on one of the sponge cakes, it turns into a jelly mass. Simmer for two minutes and spread it on one of the cake layers as described above. Once the apple mixture has cooled, spread half of the marzipan cream on top. Place the second layer on top. Cover with more cream, don’t forget the edges. It’s best to let it cool a little longer before using the marzipan topping. If you’re short on time, you can also carefully place the marzipan topping on top of the cake and press it down. You can now decorate it as you wish, or not. The cake is very rich, but it’s well worth it.
