Ingredients for 1 servings:

  • 1 packet of dry yeast
  • 350 ml water, warm
  • 2 tbsp, levelled sugar
  • 2 tbsp olive oil
  • 500 g wheat flour, type 550, or strong white bread flour
  • 2 tsp salt
  • 1 egg yolk
  • 50 ml milk
  • 2 tbsp polenta, or semolina
  • 1 tsp white sesame seeds
  • 1 tsp sesame, black

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 55 minutes

Mix the yeast, water, sugar, and oil in a bowl, cover, and let rest for about 15 minutes until a foamy head forms. Mix the flour and salt and gradually knead in the yeast mixture. Knead everything for about 10 minutes until smooth. Now cover the dough with a damp cloth and place in a warm place, then let it rise for about 1 hour until doubled in size. Preheat oven to 250 degrees Celsius (480 degrees Fahrenheit). Then divide the dough and place it on a baking sheet sprinkled with polenta or semolina (approx. 35 x 20 cm). Press it into the dough with your fingers. Mix the egg yolk and milk and brush it onto the dough. Finally, sprinkle with sesame seeds and place in the oven for about 10 minutes until golden brown. Then remove and let cool.
