Ingredients for 1 servings:
- 1 packet of yeast (dry yeast)
- 1 pinch(s) of sugar
- 400 ml natural yogurt
- 500 g flour (spelt flour type 630)
- 2 tsp salt
- 3 tbsp onions, crispy roasted
- 3 tbsp mixed herbs (dry or frozen)

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
With herbs and fried onions
Mix the yeast with sugar and yogurt (room temperature). Let it rest briefly. In the meantime, combine the spelt flour, salt, fried onions, and herbs. Then knead everything together well. Let the dough rise in a warm place for about 1 hour. Knead the dough thoroughly again and pour into a loaf pan. Let it rise for another 10 minutes. Meanwhile, preheat the oven to 200°C. Brush the bread with milk and then bake on the lowest rack for 30 minutes. The bread is very easy to remove from the pan and must be completely cool before slicing. Instead of the fried onions, I could also imagine using sun-dried tomatoes or chopped olives in this bread.
