Ingredients for 1 servings:

  • 400 g dough (rye sourdough) and 100 g 5-grain flakes
  • 85 ml water to soak the flakes
  • 225 g flour (rye flour)
  • 125 g flour (wheat flour)
  • 200 ml water, lukewarm
  • 1 tbsp, leveled salt and possibly 2 tbsp baking malt
  • 80 g sesame or other seeds as desired

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

with sourdough

Soak the flakes and let stand for about 10 minutes. Then, using all the ingredients, prepare a relatively soft bread dough and let it rest for about 20 minutes. Knead the dough thoroughly again and place it in a seeded bread pan or loaf pan. Sprinkle with seeds, if desired, and let it rise for 1.5 to 2 hours. Bake at 175°C (top and bottom heat) for about 90 minutes.
