Ingredients for 1 servings:

  • 120 g flour
  • 100 g ground almonds
  • 1 tsp baking powder
  • 50 g oat flakes
  • 150 g butter, melted
  • 1 egg(s)
  • 1 egg yolk
  • 90 g cream cheese
  • 75 g syrup (elderberry)
  • 40 g sugar
  • 1 packet of vanilla sugar

Using a hand mixer, beat the cream cheese with the butter, egg, egg yolk, elderberry syrup, sugar, and vanilla sugar until fluffy. Mix the remaining ingredients and stir in. Place small dollops of the mixture onto the baking sheet using 2 teaspoons, leaving some space between each one as they spread slightly. Bake at 160 degrees Celsius (convection oven) for 15-20 minutes; the cookies should be nicely browned all over. The oats and almonds give the cookies a nice crunch, with a light elderberry flavor and the tartness of the cream cheese in the background. Variation: If you like, you can replace the elderberry syrup with another syrup, such as strawberry or mango, or with honey, but then vary the amount of sugar slightly.
