Ingredients for 1 servings:

  • 500 g spelt flour type 1050
  • 320 ml water, lukewarm
  • 7 g dry yeast
  • 2 tsp salt
  • 130 g carrot(s)
  • 2 tbsp apple cider vinegar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 3 hours

Weigh the flour and grate the carrots. Put the flour in the bowl of a food processor. Mix in the yeast and salt. Then add the lukewarm water. Knead the dough a little. Then add the vinegar. When the dough is well kneaded, add the carrots. Knead again on low speed. Remove the dough from the bowl and knead it into a ball by hand. Place the dough back in the bowl, cover, and let it rise in the oven at 50°C for 1 hour. Knead again, place in a baking dish, and let it rise for 30 minutes. Preheat the oven to 200°C (top/bottom heat). When the temperature is reached, brush the dough with water and cut it lengthwise. Bake in the preheated oven on the middle rack for approx. 1 hour.
