Ingredients for 1 servings:
- 50 g raisins
- 3 tbsp Amaretto or rum
- 50 g almonds or hazelnuts, ground
- 200 g flour
- 70 g sugar
- ¼ tsp salt
- 1 m.-sized egg(s)
- 100 g butter

Almond raisin cookies
Mix the raisins with the amaretto/rum and let them sit in a small bowl for 15 minutes. Knead the flour, sugar, almonds/nuts, salt, egg, butter, and pickled raisins (drain off any liquid first) into a dough. Preheat the oven to 200°C (top/bottom heat) (180°C fan oven) and line a baking sheet with baking paper. Form about 35 walnut-sized mounds of dough and place them on the baking sheet. Bake the cookies in the hot oven on the middle rack for about 10-15 minutes. Tip: These cookies would make a wonderful addition to a Harry Potter party as Hagrid’s Rock Cookies (they’ll definitely taste better than the real thing). With 35 cookies, 1 cookie has about 70 kcal.
