Light quark casserole with strawberries

Ingredients for 2 servings:

  • 2 eggs
  • 1 tbsp water, hot
  • 2 tsp sweetener, liquid
  • 1 pinch of cinnamon
  • 250 g low-fat curd cheese
  • 250 g strawberries
  • 1 tsp lemon juice
  • 1 tsp margarine for the mold

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Separate the eggs. Beat the egg whites until stiff. Whisk the egg yolks with 1 tablespoon of hot water, sweetener, and cinnamon until frothy, then stir in the quark. Wash and chop the strawberries, and marinate them with lemon juice. Fold into the quark mixture, then fold in the beaten egg whites. Pour into an ovenproof dish greased with 1 teaspoon of margarine. Bake in a preheated oven at 200°C for approximately 20-25 minutes.
