Ingredients for 4 servings:

  • 300 g dumpling bread, finely chopped
  • 250 ml milk, lukewarm
  • 300 g cheese of your choice (Emmental, Tilsiter, Gouda, etc.)
  • 1 onion(s)
  • 1 tbsp flour
  • 3 eggs
  • 2 tbsp chives and parsley
  • Salt
  • 80 g butter
  • 60 g Parmesan, grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Pour the lukewarm milk over the chopped dumpling bread and let it soften. Meanwhile, dice the cheese. Add it to the bread along with the butter-sautéed onion, flour, eggs, chives, parsley, and salt, and mix well. Scoop the mixture with a tablespoon, shape into dumplings in the palm of your wet hand, and simmer gently in salted water for 15 minutes. Sprinkle with Parmesan cheese and drizzle with brown butter. Serve with a mixed salad. Note: Kasnocken are originally made with Graukäs (grey cheese).
