Ingredients for 1 servings:

  • 2 eggs
  • 50 g sugar, white
  • 50 g sugar, brown
  • 150 g butter, soft
  • 1 pinch of salt
  • 1 tsp, heaped ammonium bicarbonate
  • 1 tsp cinnamon
  • 2 banana(s), very ripe, if necessary also 3 bananas
  • rum
  • 230 g flour
  • 100 g powdered sugar
  • Bourbon vanilla flavor

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes

For the batter, mix the eggs, sugar, and butter until fluffy. Stir in the salt, baking powder, and cinnamon. Stir in the very ripe, mashed bananas and, if desired, add a little rum. Add the flour and mix the batter well. If using a food processor, the batter should rock slightly in the bowl while stirring and air bubbles should become visible, then it is ready. Preheat the oven to 180°C (convection oven). Pour the batter into any baking dish. The baking time depends on the dish. The baking time for a bread tin is approximately 50 minutes, and for a brownie tin, approximately 25 minutes. Do the skewer test. If the batter no longer sticks to the skewer, the cake is ready. Remove the cake from the oven and let it cool. For the glaze, mix the powdered sugar, bourbon vanilla, and water until a thick glaze forms. Spread the glaze over the cake and let it dry.
