Ingredients for 4 servings:
- 200 g cottage cheese, 0.8% fat
- 50 g cane sugar
- 1 tsp vanilla sugar
- 1 egg(s)
- 1 tbsp lemon juice
- 6 tbsp whole wheat flour
- ½ tsp baking powder
- 30 g raisins
- 30 g almond flakes
- Butter, margarine or sunflower oil

A delicious and healthy dessert at any time of day, very popular with children
Place the cottage cheese in a mixing bowl and lightly fluff it with a fork. Add the sugar and lemon juice. Crack the egg, whisk it with a fork, and fold it into the cheese mixture. Mix the flour and baking powder together, then add it to the cheese mixture and mix well. Heat the fat in a pan and add small dollops of the mixture. Top the cakes with raisins and almonds in the center. When the underside is crispy brown, turn them over and cook on the other side. The cakes are delicious on their own, but they also go perfectly with vanilla sauce or a scoop of vanilla ice cream. Variation: You can use other dried fruit instead of the raisins. Dried cranberries are particularly delicious.
