Ingredients for 2 servings:

  • 250 g low-fat curd cheese
  • 2 eggs
  • 60 g oat flakes, delicate
  • 2 tbsp semolina, soft wheat semolina, whole grain or regular, about 2-3 tbsp
  • 1 pinch of salt
  • some oil for frying

Working time approx. 25 minutes; Rest time approx. 20 minutes; Total time approx. 45 minutes

very simple, healthy dessert

Mix the quark (drain off any remaining whey) with the eggs, oats, semolina, and salt, and let it swell for about 20 minutes. Heat a little oil in a pan (preferably nonstick). With wet hands, form about 10 pancakes or patties and fry until browned on both sides. Serve with fruit sauce, applesauce, stewed plums, vanilla sauce, sugared strawberries, fruit compote, or similar. Notes: Since this is a fruity and sweet addition, we don’t need any sugar. However, if you like, you can also stir in 1-2 tablespoons of honey or sugar. Depending on what you want to add, you can also add a little lemon zest, 1-2 tablespoons of raisins, a pinch of cinnamon, or something similar to the quark mixture—but none of it is necessary. As a dessert, this amount is enough for 4-5 servings—then you might want to make smaller pancakes.
