Ingredients for 1 servings:

  • 200 g almond flour, partially defatted
  • 200 g soy quark (quark alternative), unsweetened
  • 15 g baking powder
  • ¼ tsp salt
  • 2 tbsp chia seeds
  • 200 ml water
  • some rapeseed oil

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 20 minutes

Preheat oven. Soak chia seeds in 200 ml of water for about 15 minutes. Stir occasionally. Mix together almond flour, salt, and baking powder. Add unsweetened soy curd. Knead with your hands or a mixer. Finally, add the chia seeds. Knead the entire dough thoroughly. Brush a medium-sized loaf pan with a little rapeseed oil. Spread the chia dough evenly. Bake at 200°C (convection oven) for about 45-60 minutes, until the surface is crispy and light brown. Let cool.
