Quick protein flatbread

Ingredients for 1 servings:

  • 2 m.-sized eggs
  • 12 tbsp, heaped oat flakes
  • 1 tsp, heaped baking powder
  • 1 pinch of salt
  • 2 ½ tbsp, heaped natural yogurt or quark
  • 1 m.-sized carrot(s)
  • 1 handful of pumpkin seeds

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Low-carb

Preheat oven to 210°C (top/bottom heat). Combine all ingredients with a hand blender. Divide the mixture into six equal portions onto the prepared baking sheet and flatten into round, approximately 0.5 cm thick flatbreads. Sprinkle the surface with pumpkin seeds, sesame seeds, and/or other toppings. Bake in the preheated oven for 12-15 minutes.
