Ingredients for 1 servings:
- 40 g yeast
- 2 tsp sugar
- 500 ml milk
- 1,000 g flour
- 40 g lard
- 2 tsp salt
Instructions
Working time approx. 35 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 50 minutes; Total time approx. 3 hours 25 minutes
Mix the yeast and sugar with 5 tablespoons of the lukewarm milk. Sift 2/3 of the flour into a mixing bowl, make a well in the center, add the dissolved yeast, and sprinkle it with flour about 1/2 cm thick. Sprinkle the sugar, salt, and the dissolved lukewarm lard around the edge of the flour. As soon as the flour sprinkled on top of the yeast begins to crack, start mixing the yeast with the flour and the remaining ingredients, gradually adding the remaining milk. Beat the dough until it bubbles. Then knead in the remaining flour. If the dough is sticky, add a little more flour. Let the dough stand in a warm place until it has roughly doubled in size, then knead it thoroughly. Shape the dough into an oblong loaf, place it on a greased baking sheet, cover with a dry cloth, and let it rise in a warm place for about 20 minutes. Make several diagonal cuts in the top of the dough. Bake the Bauernstuten at 200 degrees Celsius for about 50 minutes. After baking, brush it with a little milk to give it a nice shine.
