Fiorella's tuna salad

Ingredients for 1 servings:

  • 1 cup cream cheese, grainy, approx. 200 g
  • 1 can tuna in its own juice
  • 1 tbsp, heaped vegetable stock powder
  • 1 m.-large zucchini
  • 4 tbsp olive oil

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes

Coarsely grate the zucchini and place it in a bowl. Add the cream cheese. Open the can of tuna and discard the juice—please don’t add it to the salad! Add the tuna to the other ingredients and sprinkle with the vegetable stock. Mix everything evenly and let it sit for 10 minutes. Then stir in the olive oil. Serve with homemade spelt bread or baguette.
